Healthy Recipes: Energy Bars for a Travel Snack

These lightly fruit-sweetened bars are chock full of good ingredients, and make a nice change from overly-sweetened baked goods.

  • 2 tablespoons oil
  • 2 tablespoons tahini
  • ¾ cup apple juice
  • ½ teaspoon vanilla extract
  • 1 cup whole wheat flour
  • 1 ¼ cups oats
  • 2 tablespoons soy flour
  • ½ teaspoon baking soda
  • ½ teaspoon ginger
  • ½ teaspoon cinnamon
  • 2 tablespoons chopped walnuts
  • 2 tablespoons sunflower seeds
  • 1 tablespoon sesame seeds
  • 1/3 cup chopped raisins or dates
  • ½ cup shredded apple (1 medium)

Preheat oven to 350  F. In a small bowl, beat oil into tahini until smooth. Beat in apple juice and vanilla. Combine remaining ingredients in a large bowl. Stir in the juice mixture until uniformly blended. Spread into an oiled 8- or 9-inch baking pan. Pat down evenly. Bake 30 minutes, until nicely brown and firm. Cool in pan. Cut into bars.

 

Makes 9 bars, each about 4 x 1/2 inches
